Easy Sheet Pan Roasted Chicken and Vegetables Recipe

This meal is easily one of our family's favorite week night meals. It's so simple, yet healthy and tastes so good. You can use any variation of vegetables, but on this night we went with brussel sprouts, squash, and onions.

Ingredients:
2-3 chicken breasts, fileted and cut into strips
1 lb. brussel sprouts
2 squash, sliced
1 large purple onion, sliced
2 tablespoons extra virgin olive oil
Salt and Pepper

Directions:
1. Preheat oven to 400.
2. Line sheet pan with parchment paper.
3. Toss vegetables in oil and place on sheet pan.
4. Toss chicken in oil and place on sheet pan.  Sprinkle salt and pepper over everything.
5. Bake for 30 minutes.
