Sheet Pan Kielbasa and Vegetables Recipe
This meal is easily one of our family's favorite week night meals. It's so simple, yet healthy and tastes so good. You can use any variation of vegetables, but on this night we went with bell peppers, onions, mushrooms, and yellow potatoes.
Ingredients:
2 lbs. Kielbasa, sliced
2 bell peppers, sliced
3 yellow potatoes, diced
1 large onion, sliced
5 mushrooms, sliced
3 tablespoons extra virgin olive oil
Salt and Pepper
Directions:
1. Preheat oven to 400.
2. Line sheet pan with parchment paper.
3. Toss vegetables in oil and place on sheet pan.
4. Toss kielbasa in oil and place on sheet pan over vegetables. Sprinkle salt and pepper over everything.
5. Bake for 30 minutes.
